Origines Wines was established in 2022 by Alex Beckett and Jan Taborsky. A micro-negociant project of two passionate winemakers who met in the Master of Wine program. We seek to explore the most exciting NSW terroirs and make Chardonnay that expresses its origins. Working in cool climate New South Wales, vineyards have been carefully chosen to focus on Sustainable farming practices. An approach that reflects their deep respect for the land and its future with a focus on vine health and balance.
The winemaking philosophy is straightforward yet deeply meaningful. The aim is to capture every aspect of the grape in each glass. Hand picking from low yielding sites, carefully selecting the best fruit. Whole bunch press and fermentation with natural fruit solids and ambient yeasts in Austrian oak casks. Long maturations on yeast lees without any additions and finally natural clarification and bottling without any finings or filtration.
Tasting Note: (From the winemakers)
Restrained aromatics of lemongrass herbals, curry leaf, savoury earthy tones and nutty biscuity complexity. The palate is rich and laden with concentrated white peach, herbals, waxed lemon, creamy pastry and the typical New England muscular phenolic frame of pithy orchard skin wound into a flinty mineral finish.
