2024 Pierre-Yves Colin-Morey Bourgogne Hautes-Côtes de Beaune Au Bout du Monde
This is the one that lets you meet Colin-Morey without the Chassagne price. Au Bout du Monde is the domaine's own cuvée name rather than a classified climat, from the lieu-dit En Creuzilly out towards Nolay. In 2024 the site lost seventy per cent of its crop to frost, which is the Hautes Côtes story of that vintage in one line, and why there is no second allocation behind it.
The method is the house method and it is specific. Whole-bunch pressed over four to five hours, no sulphur at pressing, no settling of the solids. Native yeasts in barrel, mostly 350 litre demi-muids, the large format that is the reason his whites wear oak so lightly, now at twenty to twenty-five per cent new. No bâtonnage at all, no racking until April or May, around twenty-two months on lees. Bottled under nitrogen, unfined and unfiltered, under a long untreated cork sealed in wax. Everything he does to a Chassagne, done to a wine at a third of the price.
